Some time ago, I read on some article in the internet about a cendol stall in Melaka manned by an old lady in Bukit Rambai and we decided to check her stall out, twice, only to be disappointed that it was never open the two times we were there. Then, last week, we gave it another go - disappointment again but the lady (Aunty Koh) was there cleaning up the stall. We pulled up to the roadside and chatted with her. Well, the mystery solved: she only sells on weekend on a first come first basis and she advised us to be there by 11:30. She was right, the crowd soon build up the next morning very rapidly and before we knew it, she was overwhelmed by noon (and just a few more block of ice to go before she has to close shop). Eating at the stall is a very special experience because customers are obliged to self-service to the point of washing up and cleaning their table after their desserts (only cendol and taibak are sold). It is not an easy place to locate and the best indicator would be the primary school (SK Bukit Rambai) next to it...
Tool of the trade: an ice shaver machine.
Preparing the taibak. I think it is actually a gelatinous rice-based preparation served with a simple sugar syrup.
Left: cendol. Right: taibak
The cendol's secret is the coconut cream which evidently tasted like freshly squeezed cream and had a perfect consistency (had not verify with Aunty Koh yet...), giving the cendol a sumptuous texture and aroma lacking in many of today's offing in the street due to usage of commercially produced ingredients.
The queue building up...
The simple stall...full capacity less than an hour into the opening of the stall.
